Standard convection ovens are okay, but relying on air to move heat is just slow. It takes forever. That’s why we throw in 300W infrared (IR) lamps. Instead of waiting for the air to do all the heavy lifting, these lamps shoot heat directly onto the food. It’s a shortcut that actually works. While the convection air is busy browning the outside, those IR photons are shaking up water molecules deep inside the food. It’s the secret to getting that perfect contrast—a serious crunch on the outside while the inside stays juicy and tender. The nuts and bolts We don’t cut corners on the build. The lamps are wrapped in high-purity quartz glass because it can handle being turned on and off rapidly without shattering. Inside, there’s a tungsten filament packed with halogen gas. That keeps the element from burning out the moment things get hot. Most of these run on 220V-240V. We settled on 300W for a reason. If you go higher in a small oven, you end up with “hot spots.” You’ll get a charred crust and a frozen center. 300W is the sweet spot where the heat is intense but controlled. A few things to keep in mind Installing them is easy—they usually just pop into standard sockets. Just do yourself a favor and double-check your wiring gauge. You don’t want your housing overheating because the wires can’t handle the constant draw. But look, there are some trade-offs. IR lamps aren’t forever. They’ll wear out faster than those old-school resistive coils, so keep a few spares on hand. And you’ve got to be careful with placement. Since the heat is so direct, an inch can make a huge difference. If the lamp is too close to the rack, you’ll burn the top of your meal before the fan even has a chance to move the air.
